Amazing Blueberry Banana Muffins

1 1/2 cups sugar
1/2 cup butter
1/4 c. butter milk (or milk mixed with 1/2 tsp. vinegar)
2 eggs
2-3 ripe bananas, mashed (frozen first works best)
2 cups flour (we use spelt)
1 tsp. baking soda
1/8 tsp. salt
1 cup blueberries, fresh or frozen

Heat oven to 350. In a large bowl, mix first 5 ingredients and blend until smooth. Add flour, baking soda, salt and blend for another minute. Fold in blueberries and bananas. Spoon into greased muffin pans and bake for 25-30 minutes.

Makes 16 (using a 1/4 c. measuring cup)

Had these for breakfast this morning and they truly are AMAZING, and yummy :) This recipe has never let me down once. Hope you enjoy them as well.
