Mexican Stew and more . . .

Well I did manage to make it to the store over the week-end, but in the chaos of a sick kid, lost the recipes and the older kids put the items away, so no picture. I had $56 of my budgeted grocery money left (spent some on take out for New Year's Eve) and only spent $51. I put the last $5 in my gas tank : )

I did want to share the Mexican Stew recipe with ya all. It was a big hit and no leftovers!

Lo-Carb Crockpot Mexican Stew

2 lb. beef stew mat, cut into 1" cubes
1 can rotel tomatoes
1/2 cup diced onion
1 tsp. chili powder
1 envelope taco seasoning mix
1 can black soybeans
1/2 c. sour cream
1/2 cup shredded cheddar cheese

Put beef, tomatoes, onion and chili powder in your slow cooker.Cover and cook on low for 6-8 hours.

Stir in the taco seasoning and soybeans. Re-cover, turn to high and cook for another 20 minutes. To serve, sprinkle with shredded cheese and add a dollop of sour cream on top.

Serves 6, each with 399 calories, 18 g. fat, 46 g. protein, 12 g. carbohydrate, 5 g. fiber = 7 g. usable carbs.

Since we follow a healthy Leptin diet, we do have a small amount of good carbs at each meal. Just make sure the carbs are under 20 g. and less than the protein total. So I server this stew over a 1/4 c. brown rice. YUMMY!!!


Today is day 5 of twin son being sick. Our doc recommended we take him to the ER yesterday. The gave him an IV full of fluids as he was becoming dehydrated from 4 days of vomiting. They also gave him some good med. to stop the nausea. Today he is doing better. Still tired, and not eating, but NO vomiting : ) On the down side, while at the ER last night the older kids stayed home to babysit his twin sister. Sister is fine, but they lost our new dog. They didn't even know she was missing until we got home and asked where she was. Given the dog is always taking off, so no big surprise. Been 24 hours and still no dog. Hoping someone picked her up and will call the number on her tag.

Well hubby had the past two days off, not that you could call them that. Two of the four toilets at church broke yesterday, and they asked hubby to come over to fix them. The kids got all our Christmas stuff down and put in the basement yesterday - yeah kids! So today I made hubby help me rearrange all the furniture in the kitchen, dinning room and living room! Great op to also sweep and mop the entire down stairs. I guess we spring cleaned a bit early! LOL
