Going green ~

Hello Monday!  And the start of a new week : )  I finished processing the last of the tomatoes over the week-end and wanted to share a new recipe with you too.  Oatmeal green tomato bars, so yummy!

I went from this to . . .


. . . this!
I had enough to chop up 4 - 4cup bags, slice up 4 - 4cup bags and pickle about 4 qts. of olive size green tomatoes (rumored to be great in martinis).


Still had a few left and some had the audacity to ripen while on my kitchen counter.

So I chopped those up too, into 2c. freezer bags.  These will be the same as a can from the store, which I will most likely not have to buy again this year!


I already have so many upstairs that these little beauties are heading downstairs to the deep - freeze : )

Last night I made the Oatmeal green tomato bars to go with dinner and they were a big hit!

Oatmeal Green Tomato Bars

4c. green tomatoes, chopped
2c. brown sugar
1 tsp. lemon juice
1 tsp. ground cinnamon
1 tsp. lemon zest
1 1/2c. flour
1c. butter, soft
1/2 tsp. baking soda
1/2 tsp. salt
2 c. old fashioned oats
1/2 c. walnuts, chopped

In a sauce pan add drained tomatoes, 1 cup brown sugar, cinnamon and lemon juice; simmer, uncovered, for 20 -25 minutes or until thickened, stirring occasionally.

Remove from heat and stir in the lemon zest and set aside.

In large bowl cream butter and remaining 1 cup brown sugar.  Add flour, baking soda, salt and mix well.  Stir in the nuts and oats.  Measure out 2 1/2 cups of dry mix and press into bottom of greased  9x13 pan.

Spread slightly cooled tomatoes mixture on top.  Crumble remaing dry ingredients on top.  Bake at 375 for 35 minutes or until golden brown.  Let coll before slicing into 24 squares.    (Mine was like 12 squares ). 

This was so good and took on a apple like flavor and would be excellent with vanilla ice cream on top!  Tonight:  fried green tomatoes.  I prefer the triple coating method, dry, wet, dry and fry!  LOL
